Best Cacao Roaster: Oven vs Air Fryer vs Behmor vs Drum Machine


Three ways people actually roast cacao

Nearly everyone making chocolate at home starts in an oven, moves to a countertop roaster when the oven frustrates them, and moves to a drum when the countertop roaster runs out of capacity or control. Here is the honest version of each, including ours.

The home oven

What it costs: nothing. You own one.

An oven will roast cacao well enough to make chocolate, and plenty of good chocolate has been made this way. It is genuinely the right place to start, because it costs nothing to find out whether you enjoy this.

Where it runs out: an oven is a thermostat, not a roaster. You can set a maximum air temperature and that is the entirety of your control — you cannot govern how much heat is going into the beans, and you cannot see what temperature they have reached. The beans sit still unless you stir, so the ones on the outside of the pile cook while the ones inside wait. You are working with one crude lever and no gauge.

The deeper problem is that an oven cannot teach you. Every batch reports the same single bit of information — it worked or it did not — so the hundredth roast leaves you no wiser than the tenth.

The air fryer and the frying pan

What they cost: nothing, and they are the two most-searched ways to roast cacao at home after the oven.

Both work in the narrow sense that they will turn a raw bean into a roasted one. A pan on the hob at least keeps the beans moving if you stir constantly, and an air fryer moves hot air aggressively past them.

Where they run out: the air fryer's strength is its problem. It is built to blast high-velocity air, and heavy airflow is known to strip aromatics out of cacao — the very compounds you bought the origin for. Neither tells you the bean temperature. Neither holds a rate of rise. Both cap out at a few hundred grams, and a pan roast is only as even as your stirring arm. Fine for finding out whether you enjoy this. Not something you can build a repeatable profile on.

The modified countertop roaster

What it costs: roughly $400–600, plus a thermocouple modification.

The Behmor 2000AB is the machine most craft chocolate makers start on, and for good reason. It tumbles the beans, which is a real step up from a stationary tray; it is compact, it lives indoors, and it is genuinely well supported — Chocolate Alchemy sells it, documents it thoroughly, and will even supply one modified to accept a thermocouple so you can read bean temperature on it. If you are starting out, that is a sound place to start and we would tell you so.

It is also worth noticing what that modification service tells you: the market long ago decided bean temperature is essential, and people are paying to add it. That is the same conclusion this whole page rests on.

Where you outgrow it: capacity, mostly. You are roasting about a pound at a time. That is plenty for bars for yourself, and thin the moment you are supplying anyone else — a market stall, a wholesale trial, a café order. When batch size becomes your bottleneck rather than your technique, it is time to look at a drum.

The rotisserie drum

What it costs: an RK Drum kit, plus $315 for the RoastPilot controller, on a grill you already own.

A drum roaster is the machine type most cacao roasting guidance points at once someone is past the beginner stage — because a good drum roaster does the two things an oven cannot. It lets you control how much heat you are applying, rather than only capping the air temperature. And with a probe in the beans, it lets you see what that heat is doing.

An RK Drum is solid 304 stainless, 16 gauge, all TIG-welded with no rivets, with a lifetime warranty on the drum. There are no electronics inside it to fail. It installs into a standard rotisserie gas grill. Where it runs out: it lives outdoors on a grill, so weather is a real consideration — and the RoastPilot electronics are not water-resistant and need to stay dry and covered. It is also a build rather than an appliance: there is an afternoon of assembly before your first roast.

The purpose-built cocoa roaster

What it costs: from several hundred dollars to several thousand.

There are machines built specifically for cocoa — CocoaTown's CocoaT range, Spectra's mini cocoa and nut roaster, Typhoon's cocoa roasters, and a tier of industrial equipment above them. We are not going to pretend these do not exist or that they are bad. If you want an appliance that arrives assembled and is designed around cocoa from the ground up, they are a real option and worth your time.

Where they run out: each is built to one capacity and one design. Batch size is fixed, the vane geometry is whatever the manufacturer chose, and when something wears out you are dependent on that manufacturer for the part. If your volumes change, you buy another machine.

What we offer instead is a drum built to order in a machine shop: the size you need, vanes cut for what you are roasting, every component replaceable, a lifetime warranty on the drum, and heat from a grill you probably already own. Different trade, honestly stated — an appliance versus a tool you assemble and own outright.

"Can I just use my coffee roaster?"

Often yes, and it is one of the most common questions in craft chocolate. Three things to get right before you do.

Temperature. Cacao roasts far cooler than coffee — commonly cited as around 100°F cooler. Coffee settings will overshoot badly.

Airflow. Drums built for coffee often move a lot of air, which is good for coffee and bad for cacao — heavy airflow strips out the aromatics you paid for. Keep airflow low.

Vane length. Covered below, and it is the one most people miss.

An RK Drum in a grill is a coffee drum roaster by origin, so all three apply — but the heat is yours to control at the burner, the airflow is a grill's rather than a blower's, and we cut the vanes to suit. Tell us you are roasting cacao when you order.

"Aren't coffee drums too rough on cacao?"

This is the objection you will hear most, and it deserves a straight answer rather than a brush-off, because the concern is real. Cacao is more fragile than coffee, and the case people cite is a commercial coffee roaster that thrashed a cacao batch to pieces.

The cause is the vanes, and it comes down to bean size. The vanes inside a drum are the ribs that lift the beans and tumble them so they roast evenly. Their length is sized to the bean. A coffee bean is small, so coffee vanes are long. Cacao is a physically bigger bean, and peanuts bigger still — so they need more clearance to toss than a coffee bean does. Full-length vanes do not leave them enough room, and product that cannot toss freely does not roast evenly.

So we cut the vanes about an inch shorter. Same drum, same steel, same welds, different vane geometry — specified when the drum is built. That is the actual fix, and it is available to us for a simple reason: we build every drum to order in our own shop. A mass-produced countertop roaster is stamped out with one vane geometry and you get what you get. We are a machine shop, so the build can be matched to what you are roasting.

Charge level matters too, and it is where a big commercial machine is least flexible. An RK 12 LB drum has a recommended working volume from about half a pound up to fifteen — a turndown range a roaster with a twenty-pound minimum simply does not have. Combine short vanes with a charge that cushions itself and the concern is answered at the hardware level rather than worked around.

Choose Cacao as the primary roasted product when you order and the drum is built with the shorter vanes.   • Just curious? Use your oven. Find out if you love this before spending anything.
  • Hooked, making bars for yourself? A 2 LB kit or 4 LB kit with the controller. Learn on real data from the beginning — it is far easier than unlearning guesswork.
  • Selling, or about to be? 6 LB or 8 LB, plus a real cooler. Repeatability is what makes a product rather than a hobby.
  • Running a micro-factory? 12 LB, and call us about the drum spec.

Common questions

Is a coffee drum roaster suitable for cacao?

Yes, with attention to charge level. Drum roasters are the machine type most cacao guidance recommends once you are past the oven, because they keep the beans moving and let you control applied heat rather than only capping air temperature. The failures people cite come from running large commercial machines far below their minimum charge, so the beans had nothing to cushion against. An RK 12 LB drum works from roughly half a pound to fifteen, which avoids that problem.

Is the Behmor 2000AB good for roasting cacao?

It is a reasonable step up from an oven — it tumbles the beans and it is easy to live with. Its limits are capacity, at roughly a pound per batch, and the fact that it does not report bean temperature without a thermocouple modification. That modification is common enough to be sold as a paid service, which is a good indication of how essential bean temperature is.

Can I roast cacao in a home oven?

Yes, and it is the sensible place to start because it costs nothing. The limits are that you can only set a maximum air temperature rather than control applied heat, the beans sit still unless you stir them, and you cannot see bean temperature. That last one means the oven cannot teach you much — each batch tells you only whether it worked.

Can I roast cocoa beans in a coffee roaster?

Usually yes, with three adjustments. Cacao roasts far cooler than coffee — commonly cited as around 100°F cooler — so coffee settings overshoot. Airflow should be kept low, because the heavy airflow that suits coffee strips aromatics out of cacao. And the vanes inside the drum should be shorter, because a physically larger bean needs more clearance to toss and full-length vanes do not leave it enough room. Fine for finding out whether you enjoy chocolate making; not something to build a repeatable profile on.

What is the cheapest way to roast cacao with bean temperature control?

A rotisserie drum on a grill you already own. The RoastPilot controller is $315 and provides the thermocouple, live bean and grill temperature, automatic gas pressure control and saved profiles.
