What Size Nut Roaster Do You Need?


Start from output, not the drum

The question is not how big a drum you can afford. It is how much roasted product you need per session, and how many sessions you are willing to run.

Nuts have one sizing quirk that coffee does not, and it catches people out.

In-shell is bulk without weight

A pound of peanuts in the shell takes up dramatically more space than a pound shelled — the shell is mostly air. So a drum sized on weight will be badly undersized if you are roasting in-shell.

If in-shell is your main product, size up at least one step from whatever the weight suggests. If you switch between in-shell and shelled, you want a drum with a wide working range rather than a fixed capacity.

Turndown matters more than the maximum

The 12 LB drum's recommended working volume runs from about half a pound to fifteen pounds. That range is worth more with nuts than with almost anything else, because you are likely roasting several different products — a small batch of pecans, a large batch of in-shell peanuts, some cashews for butter — and one drum that handles all of them beats three that each do one thing.

Charge sensibly at the bottom of the range: a batch too thin has nothing to cushion against and tumbles poorly.

Cooling is not optional here

Nuts hold heat better than coffee because of the oil, so they keep roasting after they leave the drum. At two pounds a box fan and a colander is fine. From six pounds up, a Model R or Model F cooler is doing real work — both protecting the roast you just made and setting how many batches you can run in a session.

Do I need a cooler for nuts?

Can one drum handle different nuts and coffee?

Yes — the 12 LB drum works from roughly half a pound to fifteen, so you can run a small batch of pecans and a large batch of in-shell peanuts on the same equipment. Nuts and cacao share the shorter-vane build; a short-vane drum still roasts coffee.
