How to Roast Peanuts — Shelled and In the Shell


Two different roasts

"How do I roast peanuts" is really two questions, and the answers are not interchangeable.

In the shell, the shell is a barrier. It slows heat reaching the kernel, so the same settings take longer, and it is bulk without much weight — a batch takes far more drum or tray volume than the same finished weight shelled. It also changes how the batch tumbles.

Shelled, the kernel is exposed. Faster, less forgiving, and much easier to scorch on the surface while the centre is still bland.

Pick one and dial it in. Times from one will mislead you on the other.

A note on green peanuts

Green peanuts are freshly harvested and undried — the ones traditionally destined for boiling. They carry far more moisture than cured peanuts, so roasting them is a longer, gentler job in which most of the early phase is simply driving water off. If your peanuts are green, expect the first part of the roast to feel like nothing is happening. That is the moisture leaving, and rushing it scorches the shell while the kernel is still wet.

Method

  1. One type per batch. Do not mix in-shell and shelled, or peanuts with tree nuts. They finish at different times and you will get some raw and some burnt.
  2. Preheat properly, and give it longer than the beep — equipment announces temperature before its mass has caught up.
  3. Keep them moving. In a drum this is automatic; on a tray, stir often. Peanuts sitting still roast by depth, not evenly.
  4. Start moderate. The reflex is to push the heat and shorten the roast, but aggressive heat colours the outside long before the inside develops.
  5. Pull slightly early. They will carry on cooking — see below.
  6. Cool fast, spread thin. A colander and a box fan is fine at small scale.
  7. Salt after, not before, unless you are brining deliberately — surface moisture works against a clean roast.

The carry-over problem

Peanuts are roughly half oil, and oil holds heat well. A batch pulled at the right colour keeps roasting while it sits, and a deep pile insulates its own middle. This is the single most common reason peanuts come out darker and more bitter than intended.

Pull a shade before you think you should, and get air moving through the batch — not across the top of it — straight away.

Doing it at volume

Everything above scales badly on a tray. At any real quantity you want the peanuts tumbling continuously and a temperature you can actually see, which is what a drum with a probe gives you. On an RK Drum the vanes are cut shorter for nuts, because an in-shell peanut is many times the size of a coffee bean and needs the clearance to toss properly.

Common questions

How do you roast peanuts in the shell?

The same way as shelled but slower, because the shell slows heat reaching the kernel. It also takes far more volume for the same finished weight, so size your tray or drum up. Keep them moving, start moderate rather than hot, pull slightly early and cool fast — treat in-shell and shelled as separate profiles rather than adjusting one to the other.

Can you roast green peanuts?

Yes, but they carry much more moisture than cured peanuts, so most of the early roast is simply driving water off and it will feel like nothing is happening. Rushing that phase scorches the shell while the kernel is still wet — give it the time it needs.

Should I salt peanuts before or after roasting?

After, unless you are deliberately brining. Surface moisture works against a clean roast, and salt applied beforehand tends to draw it out.

Why are my roasted peanuts bitter?

Usually over-roasting, and usually via carry-over rather than the roast itself. Peanuts are roughly half oil, so a batch keeps cooking after you pull it — especially in a deep pile. Pull a shade early and cool fast with air moving through the batch.
