Cocoa Bean Roasting Temperature — Why Bean Temp Is Everything


The instrument you are missing

Ask someone why their chocolate came out flat, or astringent, or tasting of nothing much, and the honest answer is usually that they do not know what happened in the roast. Not because they were careless — because there was nothing to know it with.

Roasting is a skill you build by feedback. You do a thing, you see what it did, you adjust. Take the feedback away and repetition stops teaching you anything. You can roast a hundred batches in an oven and end up no better at it than when you started, because every batch gave you the same single bit of information: it worked, or it did not. That is not practice. That is a coin toss you are performing very carefully.

Coffee roasters get feedback for free. Cacao roasters have to install it.

Air temperature is not bean temperature

This is the part worth being stubborn about, because it is where most cacao roasting advice quietly falls apart.

Your grill thermometer, your oven dial, the probe clipped to the inside of a roast chamber — all of these read the air. The beans are a different object with a different mass, sitting in that air, absorbing heat from it at a rate that depends on how much cacao is in there, how wet it is, how long the metal around it has been heating, and how cold the room is.

Early in a roast the beans lag far behind the air, because every calorie going in is being spent boiling water out of them rather than raising their temperature. Later, once the moisture is largely gone, they climb much faster on the same applied heat. The gap between air and bean is not a constant you can subtract — it moves, during a single roast, in a way that depends on the batch in front of you.

Which means: there is no arithmetic that converts a chamber reading into a bean reading. If you want to know the bean temperature, something has to be touching the beans.

What the number actually tells you

Once you can see bean temperature over time, a roast stops being a black box and becomes three things you can steer independently.

Drying

Cacao arrives with moisture in it. Until that moisture is driven off, the beans cannot climb much past the boiling point of water no matter how hard you push — the energy goes into evaporation instead. On a live graph this shows as a distinct flattening. Rush this phase and you scorch the outside of a bean that is still wet inside. Drag it out and you bake the flavour flat before development ever starts.

Development

Past the moisture plateau, the bean temperature climbs and the Maillard reactions that make chocolate taste like chocolate get going. This is where the roast is actually made. How fast you travel through here — the rate of rise — is the lever with the most effect on the finished flavour, and it is invisible without a bean probe.

Finish

The end of roast is a bean temperature, not a clock time. Two batches that both took twenty minutes can finish thirty degrees apart, and they will not taste alike. This is the single number most worth writing down, because it is the one you will want to hit again.

Where the published numbers come from

You will find broadly two schools in the cacao literature. One roasts hot and short — in the region of fifteen to twenty-five minutes, finishing the beans somewhere around fifty to sixty degrees Fahrenheit above the boiling point of water. The other roasts long and low, taking forty-five to sixty minutes to arrive at a similar place more gently. Both work. They taste different, which is the point.

Treat those figures as the neighbourhood, not the address. Origin matters, bean size matters, what you intend to make with it matters, and your own preference matters most of all. The value of a bean probe is not that it hands you the right number — it is that it lets you find your number and then hit it again on purpose.

Reading it on an RK Drum

Common questions

Can I calculate bean temperature from my grill or oven thermometer?

No. The difference between air temperature and bean temperature changes during the roast and varies with batch size, bean moisture, ambient temperature and preheat time. There is no offset you can apply. The only way to know bean temperature is to measure it with a probe in contact with the beans.

What bean temperature should cacao finish at?

Published practice clusters in two schools: a hot-and-short roast of roughly 15–25 minutes finishing around 50–60°F above the boiling point of water, and a long-and-low roast of 45–60 minutes arriving somewhere similar more gradually. Both are legitimate and they taste different. Use these as a starting region and dial in your own end-of-roast temperature per origin.

Why does my chocolate taste different every batch even though I use the same recipe?

Almost always because a time-and-oven-temperature recipe does not control the variable that matters. Bean moisture, batch size, ambient temperature and how long the equipment preheated all change where the beans actually end up. Two roasts that ran the same number of minutes at the same dial setting can finish tens of degrees apart in the bean.
